• 3 tbsp butter (divided)
• 1 tbsp olive oil
• 1/2 onion (chopped)
• 2 cloves garlic (minced)
• 4-5 sprigs of thyme (leaves only)
• 1/4 cup white wine
• 2 tbsp flour
• 1/2 cup apple cider
• 1 cup chicken stock
• 1 cup heavy cream
