Butter Bean & Vegetable Soup

Ingredients

• 2 tbsp olive oil
• 1 pinch of fennel seed
• 1 pinch dried chilli flakes
• 1 onion, chopped
• 1 carrot, chopped
• 1 stick of celery, chopped
• 1 courgette, chopped
• 1 red pepper, chopped
• 1L of good quality chicken or vegetable stock
• 1 570g jar of butter beans in water (we love @boldbeanco)
• 1 125g bag of baby spinach
• 1 30g pack of flat leaf parsley, chopped
