• 2 lbs beef stew meat, cubed
• 2 tbsp olive oil
• 1 onion, chopped
• 2 carrots, sliced
• 2 celery stalks, sliced
• 4 cloves garlic, minced
• 1/4 cup tomato paste
• 1 cup red wine
• 4 cups beef broth
• 2 bay leaves
• 1 tsp dried thyme
• Salt and pepper to taste
• Chopped parsley for garnish
