Ingredients

• 2/3 cup cornstarch
• 1 teaspoon ground ginger
• 1/2 teaspoon freshly ground black pepper
• 1 1/2 teaspoons kosher salt, divided
• 3 large eggs, beaten
• 1 1/2 pounds chicken breasts, boneless and skinless, cut into 1-inch pieces
• 2 tablespoons canola or peanut oil, plus more, to taste
• 3/4 cup honey
• 1/2 cup hot pepper sauce
• 1 tablespoon rice vinegar
• 1/2 teaspoon crushed red pepper, optional
• 1/2 cup scallions, thinly sliced
• toasted white sesame seeds, optional, to taste, for garnish
• 4 cups white rice, cooked and warm, for serving
