7 Layer Cookie Cake Recipe

Ingredients

• Chocolate Ganache:
• 3 sticks of unsalted butter, softened
• 1 1/2 cups sugar
• 6 large eggs
• 12 oz almond paste, grated (or almond filling)
• 1 tbl almond extract
• 3 cups all purpose flour
• 3 tsp baking powder
• red food coloring
• green food coloring
• yellow food coloring
• 1/4 cup sedless raspberry preserves
• 1/4 cup apricot preserves
• 1 cup heavy whipping cream
• 1/2 cup semisweet chocolate chips
• Three 9 inch round cake pans, buttered floured and parchment paper on the bottom.
