Sweet, earthy beetroot and salty cheese are classic bedfellows. This happy pair is taken to the next level in this recipe with a generous drizzle of wholegrain mustard vinaigrette.
Ingredients
- 4 tbsp wholegrain mustard dressing
- 6 small/medium beetroot
- 100 g feta cheese
- 6 sprigs of thyme
- ½ tsp flakey sea salt
- ¼ tsp cracked pepper
- 60 g / ½ cup walnut halves
- 1 tsp finely chopped rosemary
- 1 tbsp honey
- ½ tsp chilli flakes
