Ingredients

• 1/2 cup vegetable oil
• 1/2 cup flour
• 4 garlic cloves, minced
• 2 cups chopped onions
• 1 cup chopped celery
• 1 cup chopped green bell pepper
• 1 (10-ounce) package frozen cut okra, optional
• 1 (16-ounce) can chopped tomatoes, with liquid
• 5 cups chicken stock
• 1/2 teaspoon cayenne pepper
• 1 teaspoon salt
• 2 bay leaves
• 1 pound sliced smoked sausage
• 6 catfish fillets, washed and chopped
