Calabacitas con Elote (Mexican Zucchini And Corn) – Oracibo

Ingredients

• 1 medium onion, chopped
• 1 clove garlic, minced
• 1 Tbsp. butter or a mixture of EVO & butter
• 1 roasted, peeled & seeded Poblano or Anaheim chili cut into thin strips
• 3 medium zucchini, diced
• 2 cups fresh cut corn or 2 cups frozen corn
• 2 tomatoes, chopped
• ½ tsp. oregano, (Mexican oregano if you have it)
• ½ tsp. salt
• ¼ tsp. freshly ground black pepper
• ½ cup shredded Monterey Jack cheese (2 oz.)
