Ingredients

• ½ large red onion, thinly sliced along the grain
• 1 ½ tsp salt
• ¼ tsp black pepper
• ¾ c fresh lime juice
• 2 garlic cloves, finely minced
• 1 jalapeno pepper, finely chopped
• 1 lb cooked shrimp
• ½ c fresh cilantro, finely chopped
• 1 c diced cucumber
• 1 c Bella Sun Luci sun dried tomato halves in oil, rough chopped
• 1 ripe avocado, diced
