Ingredients

• 1/2 medium clove garlic, peeled and minced
• 1/4 teaspoon kosher salt
• 3 tablespoons olive oil
• 3 tablespoons lemon juice plus zest of 1 lemon, for serving
• 1/8 teaspoon red pepper flakes
• ground black pepper, to taste
• 1/4 cup parmesan cheese, freshly grated, plus more, to taste, for serving
• 1 large bunch Tuscan kale, washed and dried, destemmed, chopped
• croutons, optional, to taste, for serving
