Ingredients

• 1 can (8 oz / 227 g) crushed pineapple in juice
• 1 tablespoon fresh lemon juice
• Cold water as needed, about 1/2 cup (120 ml)
• 1 package (3 oz / 85 g) lemon gelatin
• 1 cup (240 ml) boiling water
• 2 cups (190 g) finely grated carrots, from 2-3 medium carrots
• 1/2 cup (55 g) chopped pecans
• 1/8 teaspoon fine salt
