Ingredients

• 2 tablespoons olive oil, divided
• 2 boneless chicken breasts, cut into bite size pieces
• sea salt and ground black pepper
• 1 medium yellow onion, chopped
• 1 green pepper, diced small
• 2 stalks celery, sliced
• 1 carrot, diced small
• 3 cloves garlic, chopped fine
• 1 teaspoon dried oregano
• ½ teapoon red pepper flakes
• ½ teaspoon fennel seeds, crushed
• 1 bay leaf
• 1 28-oz can diced tomatoes
• 5 cups chicken broth
• 2 tablespoons tomato paste
• 2/3 cup orzo or other small pasta
• grated Parmesan cheese
