- 1 red chilli, deseeded and finely sliced
- Juice of 1 lemon
- 4 small barley rusks
- 1 tsp. dried oregano
- 1 small red onion, finely chopped
- Sea salt and freshly ground black pepper
- 12–16 kalamata olives, chopped
- 100 g feta cheese
- 200 g ripe tomatoes, roughly chopped (or use cherry tomatoes, halved)
- 4 tbsp. extra virgin olive oil
