Ingredients

  • 1 red chilli, deseeded and finely sliced
  • Juice of 1 lemon
  • 4 small barley rusks
  • 1 tsp. dried oregano
  • 1 small red onion, finely chopped
  • Sea salt and freshly ground black pepper
  • 12–16 kalamata olives, chopped
  • 100 g feta cheese
  • 200 g ripe tomatoes, roughly chopped (or use cherry tomatoes, halved)
  • 4 tbsp. extra virgin olive oil
