Cajun Chicken With Corn Recipe | Schwartz

Ingredients

• For the chicken:
• 1 kg skinless and boneless chicken thighs
• 6 tsp cajun seasoning
• 2 tbsp extra virgin olive oil
• For the corn on the cob:
• 8 mini corn on the cobs
• 50 g unsalted butter
• 1/2 tsp chilli powder mild
• 1/4 tsp Coriander Leaf
• For the Cajun lime mayonnaise:
• 150 g mayonnaise
• cajun seasoning
• 1 lime, zest and juice (use only half juice first and taste)
• For the salad:
• 2 oranges, skin removed and cut into segments
• 200 g watercress
• 200 g radishes, thinly sliced
• 1 tbsp olive oil
