Hatley Little Blue House

Ingredients

• 2 tbsp olive oil
• 1 lb spicy Italian sausages, casings removed
• 1 large white onion, chopped
• 2 carrots, peeled and chopped
• 2 stalks of celery, chopped
• 3 cloves of garlic, chopped
• 1/2 tsp red pepper flakes
• 2 cups of Puy lentils (or other green lentils), rinsed under cold water
• 1/2 cup white wine
• 8 cups chicken stock
• 1 can (28 oz) of pureed tomatoes
• 1 bay leaf
• 1/2 cup chopped Italian parsley
• 2 tbsp balsamic vinegar
