• 1 eggplant
• 1 box lasagna pasta (I used 12 pieces)
• 1-2 10 oz. packages spinach, thawed and drained
• 1 jar of your favorite spaghetti sauce (I used Ragu)
• 10 (or more/less) mushrooms, chopped
• 1 large onion, chopped
• 1 bell pepper, chopped
• burger-style crumbles
• dab of margarine (optional)
• olive oil for cooking
• 1 tub vegan cream cheese (Tofutti Better Than Cream Cheese)
