- 1 3/4 cups (260g) Whole Grain Spelt Flour
- 1 tsp kosher salt
- 1 Tbsp sugar
- 3/4 cups (170g) unsalted butter, cut into small cubes
- 1 1/2 cups (115g) shredded old cheddar cheese
- 1/2 cup plus 2 Tbsp ice water
- 1 tsp apple cider vinegar
