Simple Tomato Sauce – Simmer + Sauce

Ingredients

• 1/4 cup Extra Virgin olive oil
• 1 small yellow onion, small dice
• 1 large carrot, peeled, small dice
• 1 stalk celery, small dice
• 4 garlic cloves, peeled and smashed
• Two (28-ounce cans) whole tomatoes, chopped (San Marzano preferably)
• Kosher salt to taste
