- 2 tbsp extra virgin olive oil
- 1 medium Spanish onion (150g), chopped finely
- 3 cloves garlic, crushed
- 2 tsp ground cumin
- 1 tbsp ground smoked paprika
- 800g canned tomatoes
- ½ tsp salt
- ½ tsp sugar
- 4 eggs
- 1 tbsp chopped parsley
- Serve with toasted bread
