Ingredients

• 2 2/3 cups all-purpose flour
• 4 teaspoons baking powder
• 1/2 teaspoon baking soda
• 2 teaspoons ground cinnamon
• 1 teaspoon salt
• 2 pounds carrots, grated fine (7 cups)
• 1 cup plus 2/3 cup granulated sugar
• 1/2 pound (2 sticks) unsalted butter
• 1 cup light brown sugar
• 5 eggs
• 1 1/2 teaspoons vanilla extract
