A deliciously tasty Mexican twist on a classic omelette! We combine eggs with caramelised onions, coriander, grated cheese and Chipotle Paste

- 2 tblsp olive oil
- 1 onion
- 4 eggs
- 79ml / ⅓ cup of milk
- 1 tsp Chipotle Paste
- Salt & pepper, to taste
- Small handful of coriander
- 60g / 2 oz grated cheddar cheese
- 2 tomatoes, deseeded and diced
- 1 pack of Soft Taco Wraps
- 1 pack of Refried Beans (optional)
