Acacia honey is a pale, mild honey commonly produced from the flowers of the black locust tree, Robinia pseudoacacia. Despite the commercial name, this tree is not a true Acacia.
The honey has a delicate floral flavor and tends to remain liquid for a long time. It is used to sweeten tea, yogurt, and other foods without adding a strong honey flavor, and can be drizzled over cheese or fruit.
