Ají panca is a Peruvian chili commonly sold dried or as a paste. It brings a dark red-brown color and fruity, earthy flavor to marinades, sauces and stews, usually with less heat than many other chilies.
It is distinct from ají amarillo, which has a different color and flavor. Commercial pastes vary in salt and other additions. Taste the product before deciding how much to use or replacing another chili by volume.
