Beurre monté is made by gradually whisking butter into a small amount of warm water so the fat remains dispersed in an emulsion. It can coat vegetables, finish a dish or serve as a gentle butter-poaching medium. Keep the heat controlled to avoid splitting.
It differs from clarified butter, which has its water and milk solids largely removed, and from flour-thickened beurre manié.
