Blackfish

Ingredients

Blackfish, or tautog (Tautoga onitis), is a saltwater wrasse found along rocky, nearshore waters of the northeastern US Atlantic coast, from New York and New Jersey up through Massachusetts. It has a firm, flaky texture and a mild, slightly sweet flavor. It bakes, broils, grills, and fries well, and appears in New England-style chowders and stews as well as in whole-roasted preparations with lemon and herbs. Long fished by coastal communities and prized by recreational anglers, tautog holds up to robust marinades and pairs well with citrus, garlic, and herbs like thyme and rosemary.
