Bulk sausage, also called loose sausage, is seasoned ground meat -- typically pork, beef, or turkey -- sold or prepared without a casing, unlike link sausage, which is stuffed into a casing and formed into individual links. It's commonly seasoned with sage, thyme, fennel, or similar herb blends, and used in breakfast dishes like sausage patties, sausage gravy, and casseroles, as well as pasta sauces, stuffing, meatballs, stews, and braises. Because it has no casing, it can be crumbled directly into a pan or mixed into other dishes rather than sliced.
