Cheddar Sauce

Sauces & Condiments

Cheddar sauce is a smooth, pourable cheese sauce made by melting shredded cheddar into a base of milk, cream, or a butter-and-flour roux, then seasoning with salt, pepper, and often mustard or paprika. It is used as a topping for baked potatoes, broccoli, or macaroni and cheese, as a dip for pretzels and nachos, and as an ingredient in casseroles and soups. Sharper, longer-aged cheddar makes a more pungent, tangy sauce, while mild cheddar gives a subtler result; it differs from a classic Mornay sauce mainly in using cheddar rather than Gruyère or another traditional melting cheese.
