Chicken tenders, also called chicken fingers or fillets, are the small strips of meat (the pectoralis minor) that lie on the underside of a chicken breast, prized for being especially tender since that muscle does less work than the main breast. They are most often breaded and fried, and are common in American dishes like chicken fingers, strips, and sandwiches, as well as in stir-fries, curries, and skewers in other cuisines. Their mild flavor makes them a blank canvas for sauces like honey mustard, barbecue, buffalo, and ranch.
