Chocolate crust is a pastry or pie base made by working cocoa powder or melted chocolate into a dough, as opposed to a chocolate cookie crust, which is made from crushed pre-baked cookies rather than a rolled dough. It is rolled or pressed into a pan and baked, giving pies and tarts a chocolate-flavored shell that contrasts with a cream or custard filling. Because chocolate crust dough is more delicate than a cookie-crumb crust, it is usually chilled well before rolling and baking.
