Cloudberries (Rubus chamaemorus) are a golden-orange, raspberry-like berry that grows wild in cool northern bogs and tundra across Scandinavia, Russia, and parts of North America rather than on cultivated farms - large-scale cultivation has proven difficult, so most of the supply is still hand-foraged. Finland, Norway, and Sweden are the main sources, where the berry has long been prized in local food traditions.
The flavor is tart-sweet with a delicate, slightly floral note, and the berries are highly perishable, so they're most often preserved as jams, syrups, and liqueurs, or baked into pies and tarts, rather than sold fresh far from where they're picked.
Cloudberries pair well with dairy (yogurt, ice cream, crème fraîche), nuts, honey, and warm spices like cardamom and cinnamon, and in savory dishes they add acidity that balances rich meat, game, and oily fish.
