Cookie Butter

Cookie butter, also known as speculoos spread, is a creamy, spreadable confection made from crushed speculoos cookies. Speculoos are a type of spiced shortbread cookie popular in Belgium and the Netherlands, traditionally flavored with cinnamon, nutmeg, cloves, and other warm spices.

The origins of cookie butter as a commercial spread trace back to Belgium in 2007, when a contestant on a televised cooking competition ground up speculoos cookies and mixed them with vegetable oil to create a sweet, spreadable paste. A Belgian speculoos maker then commercialized the recipe as Biscoff Spread, and cookie butter quickly became a beloved specialty food item in the region before spreading internationally.

Today, cookie butter is widely available internationally and has gained popularity as a versatile ingredient in both sweet and savory applications. The smooth, buttery texture and complex spiced flavor profile of cookie butter lend themselves well to a variety of uses.

In baking, cookie butter can be used as a spread, dip, or filling for cookies, cakes, pastries, and other desserts. It pairs especially well with chocolate, caramel, and other warm spices. Cookie butter can also be incorporated into batters and doughs to add flavor and richness. Some common baked goods that feature cookie butter include cookies, cheesecakes, truffles, and crepes.

Beyond baking, cookie butter has culinary applications in both sweet and savory dishes. It can be used as a topping for waffles, pancakes, and ice cream, or swirled into oatmeal, yogurt, and smoothies. In savory preparations, cookie butter can be used as a glaze for roasted meats and vegetables, or as a flavoring agent in sauces, dressings, and dips.

While the original Belgian speculoos-based cookie butter remains the most well-known variety, there are now numerous commercial and homemade versions that incorporate different cookie or nut butter bases. Some common variations include peanut butter cookie butter, almond cookie butter, and even chocolate chip cookie butter. These alternatives offer slightly different flavor profiles while maintaining the signature creamy, spreadable texture.

Regardless of the specific ingredients, cookie butter is prized for its versatility, rich flavor, and ability to add a unique twist to both sweet and savory dishes. Whether enjoyed on its own as a snack or incorporated into a wide range of culinary applications, cookie butter has solidified its place as a beloved and indispensable ingredient in the modern kitchen.
