Dutch-process cocoa is cocoa powder treated with an alkaline ingredient. It is generally less acidic than natural cocoa, with changes in color and flavor depending on the treatment. Black cocoa is a strongly alkalized style.
It is not automatically interchangeable with natural cocoa in chemically leavened baking. Whether a swap works depends on the whole formula, including other acids, baking soda and baking powder.
