Furikake is a dry Japanese seasoning blend, traditionally toasted sesame seeds, salt, and crushed dried seaweed such as nori, sometimes with dried fish or shrimp and flavorings like shiso or citrus zest, for a crunchy, umami-rich topping. It was developed in Japan in the early 20th century as a way to add flavor and nutrients to plain white rice, and is still most often sprinkled over rice, though it's also used on eggs, popcorn, avocado toast, and mixed into onigiri (rice balls). Outside Japan, furikake has been adopted more broadly as a general-purpose savory, crunchy garnish for grilled meats, fish, vegetables, and salads.
