Green mangoes are unripe, immature mangoes that are harvested before they reach full ripeness and develop their characteristic sweet, tropical flavor. These firm, sour fruits are a staple ingredient in many Southeast Asian cuisines, as well as parts of the Caribbean and Latin America.

The mango tree (Mangifera indica) is native to the Indian subcontinent, with evidence of mango cultivation dating back over 4,000 years. From its origins in modern-day India, Pakistan, and Bangladesh, the mango spread throughout Asia and eventually to other tropical regions around the world. Today, the top mango producing countries include India, China, Mexico, Thailand, and Pakistan.

Green mangoes are typically harvested in the early to mid-stages of mango development, when the fruit is still hard, green, and sour. This unripe state allows the mangoes to be used in a variety of savory dishes, pickles, and chutneys, in contrast to the sweet, soft flesh of ripe mangoes. Common culinary uses for green mangoes include Thai green mango salad (yum mamuang), atchara (Filipino green mango pickle), and Indian chutneys. It is easy to confuse this salad with som tam, the similar-looking Thai salad made from green papaya rather than green mango.

The flavor profile of green mangoes is predominately sour and tart, with notes of astringency and bitterness. As the mango ripens, the sourness gradually gives way to sweetness. Green mangoes also contain higher levels of vitamin C, vitamin A, and fiber compared to their ripe counterparts.

Green mangoes pair well with bold, assertive flavors that can stand up to their acidity. Common accompaniments include chiles, shallots, fish sauce, lime juice, palm sugar, and dried shrimp. In Thai and Vietnamese cuisines, green mangoes are often combined with herbs like cilantro, mint, and Thai basil. Indian chutneys may feature green mangoes alongside spices like cumin, mustard, and fenugreek.

Beyond their culinary applications, green mangoes also have a history of medicinal and cultural uses in parts of Asia. In Ayurvedic medicine, unripe mangoes are believed to have cooling properties and are used to treat digestive issues. Green mangoes are also incorporated into certain religious and folk rituals in India and other South Asian countries.
