A Japanese sushi preparation in which vinegared rice and a filling are rolled inside a sheet of nori using a bamboo mat, then sliced into bite-sized rounds. Also called makizushi, from the Japanese word for "rolled." Fillings range from raw or cooked fish and vegetables to items like avocado or cream cheese in Western-style rolls such as the California and Philadelphia roll. It's distinct from nigiri, hand-pressed rice topped with a slice of fish, and temaki, a hand-rolled cone; maki is usually cut into six to eight pieces and served as part of a larger platter.
