Mitmita is an Ethiopian spice mixture commonly built around very hot dried chilies, with aromatics such as korarima and cloves and often salt. It may season foods during preparation or be offered in small amounts at the table.
It differs from berbere in composition and often in heat. Both vary by maker. Begin sparingly and account for any salt already in the blend rather than replacing one with the other spoon for spoon.
