Normandy Cuisine

Culinary Styles & Cuisines

Normandy cuisine is the regional cooking of Normandy in northern France, built around dairy, seafood, and apples. The region produces protected-designation butter (Beurre de Normandie) and well-known cheeses including Camembert, Livarot, and Pont-l'Évêque. Coastal seafood such as sole, cod, mussels, and oysters is typically poached, grilled, or simmered into stews, as in moules à la crème (mussels in cream sauce). Apples appear in both savory and sweet dishes, from potatoes cooked with cream and apples to apple tarts and Calvados, the region's apple brandy. Other signature dishes include tripes à la mode de Caen and teurgoule, a cinnamon-spiced rice pudding.
