Penne Rigate

Dishes & Recipes

Penne rigate is the ridged version of penne: short, diagonally cut pasta tubes with grooves running along the surface. The ridges, absent from smooth penne lisce, help sauce cling to the pasta, which is why penne rigate is the more common choice for baked pasta dishes and heavier sauces. Like most dried Italian pasta, it's made from durum wheat semolina and often extruded through bronze dies, which roughen the surface further and improve sauce adhesion compared to Teflon-extruded pasta. It pairs well with tomato-based sauces, creamy sauces such as Alfredo, and baked dishes like baked ziti.
