Round Zucchini

Ingredients

Round zucchini, also called globe or eight-ball zucchini, is a summer squash variety with a spherical shape instead of the usual elongated one; Italian heirloom types such as Tondo di Piacenza are well-known examples. It has the same mild, slightly sweet flavor and tender flesh as standard zucchini once cooked. Its round shape makes it especially suited to stuffing -- with rice, meat, or cheese, then baked or grilled -- and to slicing into rounds for roasting. Look for specimens that are firm and heavy for their size; like other summer squash, they keep in the refrigerator for about a week.
