Satay sauce, also called peanut sauce or bumbu kacang, is a rich, creamy condiment made from ground or pureed peanuts, most associated with Indonesian and Malaysian cuisine. It typically combines peanuts with garlic, shallots, chili peppers, lime juice, soy sauce, and coconut milk, balancing savory, sweet, and sometimes spicy notes.
It is the classic dipping sauce for satay (grilled, skewered meat), but is also used as a marinade or dressing, and to add a nutty, creamy base to noodle dishes, rice bowls, and curries.
