Slaw is a salad of finely shredded raw cabbage, or sometimes other vegetables, tossed with a dressing, most often mayonnaise-based but sometimes vinegar-based. The name comes from the Dutch koolsla, "cabbage salad"; the dish came to the United States through Dutch settlers and became especially popular in the American South. It is served both as a side dish and as a topping for sandwiches, burgers, and barbecue, where its crunch and acidity cut through rich or fatty foods. Common variations swap in other vegetables, such as broccoli slaw, add fruit, or use an Asian-style sesame-rice vinegar dressing in place of mayonnaise.
