Swedish cuisine is the traditional cooking of Sweden, shaped by a long coastline, a cold climate, and a farming and fishing economy. Seafood such as herring, salmon, and trout, often cured, smoked, or pickled, and dairy products like cultured cream, cheese, and butter are central, alongside preserved and root vegetables suited to long winters. The smörgåsbord, a buffet of hot and cold dishes eaten communally, and köttbullar (meatballs of ground beef and pork seasoned with allspice and white pepper, served with cream gravy, lingonberry jam, and mashed potatoes) are the best-known dishes internationally. Sweden also has a strong baking tradition, including kanelbullar (cinnamon buns), pepparkakor (spiced ginger cookies), and saffron-scented Lucia buns served around the December Lucia festival.
