White chili (or white bean chili) swaps the tomatoes, red chili peppers, and often beef of classic chili con carne for white beans, chicken or turkey, and milder green chiles, giving it a pale color and gentler heat. It's associated with Tex-Mex and Southwestern American cooking as a milder alternative to red chili.

It's made by simmering cannellini or Great Northern beans with shredded chicken or turkey, onions, garlic, and green chiles such as Anaheim or Hatch, seasoned with cumin and oregano; some versions add corn, bell peppers, or cheese like Monterey Jack.

White chili is the broader term, covering versions made with turkey as well as chicken; when chicken specifically is used, the dish is often called white chicken chili. It's served with cornbread, tortillas, or as a filling for burritos, and finished with sour cream, cheese, and cilantro.
