Shepherd's Pie Southwest Style – Wells Farms

Ingredients

• 2 lbs Wells Farms ground beef
• 1 small onion, chopped
• 1/2 red bell pepper, chopped
• 1/2 green bell pepper, chopped
• 1 can (10 oz) enchilada sauce
• 1 - 2 chipotle chilies in adobo sauce (seeded and chopped)
• 2 tsp of the adobo sauce
• 1/2 tsp cumin
• 1/2 dried oregano
• 2 cups whole kernel corn
• 6 small/medium yellow potatoes, peeled and cubed
• 3 T sour cream
• 2 T butter
• 1/2 cup Mexican Cheese
• 1 (4.5 oz) can chopped green chilies
• 1 - 2 cups shredded Mexican cheese
• Smoked paprika
• 3 green onions, chopped
• 1 tomato sliced into wedges
