• 4 large fresh tomatoes
• 1 9 inch pie crust (homemade or store-bought)
• 1 1/2 cups shredded cheddar cheese
• 1/2 cup Mexican blend or Colby Jack cheese
• 1/2 cup shredded fresh Parmesan cheese
• 8 slices crispy bacon (roughly chopped and divided)
• 2-3 tablespoons olive oil
• 1 large garlic clove (minced)
• 2 teaspoons fresh rosemary (minced finely)
• salt and pepper to taste
