- flavourless oil to grease the tin
- 1 x 600ml pot double cream

- 2 tsp vanilla extract
- a few drops red or pink gel food colouring*, optional
- 1 x 295g Madeira cake, darker crust trimmed
- 50g dark chocolate, finely chopped
- 1 tbsp 100s and 1000s to decorate
