Pork Enchiladas | Our Cow

Ingredients

• 500g Our Cow Pork Mince
• 2-3 tbsp Our Cow Mexican Spice Rub (or 1 packet of taco seasoning)
• 1 tbs olive oil
• 1 red onion, finely chopped
• 1 red capsicum, seeded and diced
• 2 garlic cloves, crushed
• 1 can red kidney beans, drained and rinsed
• 1 cup coriander leaves, finely chopped
• 1pack large wraps (your choice)
• 1 cup grated cheese
• Diced avocado, sour cream and salsa to serve
