Simnel Cake - James Martin Chef
Simnel Cake is a traditional Easter Cake. It's all home made...including the marzipan! It will keep for a few days and is great for sharing!
Ingredients
- 175g butter
- 175g dark brown sugar
- 3 eggs
- 50ml milk
- 175g self raising flour
- 2 tsp mixed spice
- 1 tsp ground ginger
- 100g glace cherries chopped
- 400g mixed fruit or sultanas
- 50ml brandy
- 175g caster sugar
- 300g icing sugar
- 450g ground almonds
- 2 eggs
- Squeeze of lemon
