Sausage Yambalaya

Ingredients

• 1/2 cup chopped onion
• 1/2 cup coarsely chopped green
• pepper
• 1 clove garlic, minced
• 2 tablespoons butter or margarine
• melted
• 2 tablespoons all-purpose flour
• 2 1/2 cups water
• 1/2 cup dry white wine
• 2 tablespoons chopped fresh
• parley
• 1 bay leaf
• 1/2 teaspoon dried whole thyme
• 1/2 teaspoon red pepper
• 1 1/4 teaspoons salt
• pepper to taste
• 5 cups peeled, diced tomatoes
• 2 cups uncooked regular rice
• 1 pound polish sausage, cut into
• 1/4 inch slices
• 4 whole chicken breasts, boned,
• skinned and cut into bite size
• 1/2 pound fresh shrimp, peeled
• and devined
