Cooking tools:

  • Pot
  • Stove
  • Cutting board
  • Chef's knife
  • Mixing bowl
  • Spoon

Ingredients

  • 2 tsp. + a pinch or two of Mediterranean Magic
  • 1 cup quinoa, uncooked
  • 2 cups water
  • 1/2 cup carrots, diced 1/8"
  • 1/2 cup cucumber, seeded and diced 1/8"
  • 1/2 cup celery, diced 1/8"
  • 1/4 cup red onion, diced small
  • 1/4 cup flat leaf parsley, chopped
  • 1/2 cup apple, diced 1/8" (granny smith is what I used, but any apple will do)
  • 1/2 cup cheese, diced 1/8" (I used Ricotta Salata, but any good, hard cheese works great - but nothing too strong)
  • 4 tbsp. Hemp oil/Olive Oil (if you can find hemp oil, it adds a great nutty flavor.)
  • 2 tbsp rice wine vinegar
  • 1 lemon, juiced
